Merry Christmas to ALL!
I hope you are all enjoying a wonderful, safe, and happy Christmas. I feel so lucky to have both our daughter and son with us to celebrate this wondrous holiday. (I always feel like all is right in the world when the four of us are together again.)
We have our Christmas puzzle all set up and are just sort of taking things easy today. I decided to not complicate the menu this year so I wouldn’t be stuck in the kitchen all day, so I was able to get some of the items ready yesterday. I always try to incorporate a recipe from my grandmother and another recipe from my mother, to give the meal a nostalgic, family feel to it. Growing up I certainly took a lot of the meal preparation for granted, and still remember my grandmother spending hours and hours getting everything prepared. Perhaps this is the type of thing we all think about as we grow older…

Danna, Christmas with just Dad and I is rather quiet but I made him a corn casserole that is a family favorite. I took it over when his mom and my aunt (his sister) passed away. Here it goes: for you and viewers that may like to make it – easy and tasty and good at Christmas and Thanksgiving. Glad your family is together. Dad misses that with Mom gone and Jeffrey in Vermont. The grandkids are all over the place.
Depending on how many you are serving, you’ll need a can of creamed corn for every 4 people, and a can of 6 oz evaporated milk for every 3 cans of corn. You’ll need a stick of butter to melt and pour over the top crust. So to start with a family of 4,use 3 cans of
creamed corn in a greased casserole dish of 2 quarts. layer the corn,
1 cup of crushed Ritz or Club crackers and 1/3 cup Pet or evaporated milk per layer. On the top, crush a cup of the crackers and cover the top layer of corn.. Pour 1 cup butter or melted stick over the crust and bake at 350F for one hour.
That’s it folks. Have a Happy Holiday season and have fun with that puzzle, Danna. I love them but don’t get many done! My dog has a tendency to want me to get him out for a walk or his meal (4 times a day-he’s a little pig) when I have something to do.
Rob, thank you for posting your Christmas corn recipe. We’ve been doing family Christmas puzzles for the past several years, and they have turned out to be lots of fun. Everyone contributes a few pieces to the finished puzzle during the time it’s out.
Your dog sounds like a lot of fun. Every time I get ready to go adopt a dog I remind myself about walking him/her every day >>> regardless of the 100°+ weather. For some reason, that 100°+ walk has been a road block for us.
